Being prepared. Make sure your manager knows what you need the most of behind the bar, as well as things as peanuts, napkins, or matches, if you keep them on the bar. Stuff like that. |

It depends on the place. If you're at a top-notch trendy bar knowledge, experience, and speed are paramount. If you're tending at the local pub, having a good ear and talking to the regulars is key. |

Don't sneak around and hire someone from another bar/club who is currently employed. If the bartender approaches you and asks about openings, then you can talk with them and the manager/owner they currently work for. Between the three of you discuss the situation and arrange a timeframe for notice (2 weeks, etc.) and then make the move. But don't go headhunting in someone else's place. |

They have to have an outgoing personality. They have to be able to recognize when a patron needs another drink as well as when they've had enough. Being a "people person" doesn't hurt either. Being able to converse with the clientele, remember regulars' drinks, and make people feel welcome will keep customers coming back. Anybody can make a drink, it takes someone special to work the crowd. |

I go with the word-of-mouth-method. I ask around to see if anyone knows of anyone that might want a job, and then check around to see if others have heard about this person and see what they thought of them. |
