Flair is "performance bartending". Flipping the bottles in the air, fancy pours, stuff like that. It was created by an American, Jerry "The Professor" Thomas in the mid 1800s. When he made his famous Blue Blazer he poured flaming scotch and water from mug to mug in a long stream of fire.

An example of flair is a bartender who puts two or more bottles in one hand. Flair is pretty much an efficiency of movement with a little flavour. Technically, flair is the flipping, spinning, throwing, balancing, catching bottles, drinks, and various bar tools while in the process of making drinks. It involves very technical pours and cuts that are accurate, with no spills while performing different tricks and moves. Fire is a favorite in flair.

If you can, visit a bar that advertises flair, or go to a flair competition. The Southport Maloneys Flair Bartender Challenge was held a couple of years back here in the UK. Flair bartenders compete to win money or other prizes; they usually have to make a drink or two in a set amount of time and whoever does the best wins.

BarWizards are a couple of flair bartenders here in the UK. You can see their stuff at their website, www.barwizards.net. THey were on britains got talent a while ago too.

Flair bartenders can also have special bottles. They can buy blank bottles and then decorate them themselves, or buy decorative bottles that add to their performance.

My friends took me to Maloney's this weekend and I got to see the bartenders do their stuff. Wow-they made it look easy!
